1. Peel potatoes and cut into 1-inch pieces. Add potatoes to a large pot of boiling water; add enough water to cover by 2 inches. Boil potatoes until tender, about 15 minutes. Drain well.

2. Return potatoes to the pot. Add milk and butter; mash with a potato masher until smooth. Stir in buttermilk and season with salt and pepper. Serve immediately.

Ingredients:

  • 1 lb. dried elbow pasta
  • 1/2 c butter
  • 1/2 c flour
  • 1 1/2 c whole milk
  • 2 1/2 c half and half
  • 4 c medium sharp cheddar cheese
  • 2 c Gruyere cheese
  • 1/2 Tbsp. salt
  • 1/2 tsp. black pepper
  • 1/4 tsp. paprika
  1. Preheat oven to 325 degrees F. Butter a 3 quart baking dish.
  2. Cook pasta in a large pot of boiling water for 6 minutes. Drain and set aside.
  3. Melt butter in a saucepan over medium heat. Stir in flour and cook for 1 minute.
  4. Whisk in milk and half and half. Bring to a boil, whisking constantly.
  5. Reduce heat to low and simmer for 5 minutes, whisking occasionally.
  6. Add 3 cups of cheddar cheese and 1 1/2 cups of Gruyere cheese. Stir until melted.
  7. Add salt, pepper, and paprika. Stir until well blended.
  8. Add cooked pasta to the sauce and stir until evenly coated.
  9. Pour into the prepared baking dish. Sprinkle with the remaining cheese.
  10. Bake for 15 minutes, or until golden brown and bubbly.
